Upon arrival in Mottola, you settle in and immediately begin to breathe the rhythm of the region, with a traditional Pugliese welcome dinner that sets the tone. From there you roll up your sleeves to make pesto in Alberobello, tour cheese workshops to craft mozzarella and ricotta, try your hand at making tomato salsa, panzerotti, focaccia, biscotti, and even infused oils, each class bringing you closer to the local heart.

Castel del Monte, built in the 13th century by Frederick II, with its perfect octagonal shape, sits atop a hill overlooking olive groves and wild lands, a marvel of medieval architecture celebrated for its elegance and mystery.
